Yuliyan Yamantiev, a structural engineer, fell in love with the place and the winery in 1996 while doing construction work in Ivaylovgrad. He was stunned by the unspoiled beauty in the heart of Thracian Valley, an area kept closed during the socialism for being a stone throw from the Greek border. Initially he rented the winery in 1998 and bought it in 2000 to embark on a very ambitious program of renovation and modernisation. During the refurbishment in the winery were found ancient Roman mosaics, establishing a link with a Roman Villa unearthed nearby dating back 2000+ years.

Vineyards

The winery is situated in Ivaylovgrad, a town located in the remote regions of the Southern Bulgaria’s Eastern Rhodopes. With its proximity to the Mediterranean or White Sea at just 70 km away, the area benefits from the influence of the ‘white wind,’ a phenomenon that greatly enhances the aromatic qualities of the grapes. The local environment is characterized by a semi-arid climate and soils reminiscent of cinnamon-coloured mountains.

The vineyards, exclusively owned and boasting approximately two decades of growth, sprawl across the outskirts of Ivaylovgrad.

Vinification

The wine itself is a blend composed of 40% Merlot, 40% Cabernet Sauvignon, and 20% Rubin.

Tasting Notes

In the glass there is a ruby hue enriched by delicate crimson undertones. The aromas are notably intense, marked by the presence of ripe blackcurrants, plums, and cherries. As for the palate, it offers a seamlessly smooth and harmonious experience, concluding with a lingering, gentle finish.

In terms of food pairings, this wine pairs excellently with barbecued dishes like burgers, and sausages, or with pasta served with tomato sauce, as well as terrines.
