Ultimate Provence Ros, Ctes de Provence has the wonderful, typical, pale pink colour of Provence Ros with delicate copper highlights. The aroma combines fresh lemon, exotic fruits, and floral hints like violet and geranium. On the palate, enjoy ripe red fruits and refreshing citrus, finishing with a subtle white pepper spice. This ros pairs beautifully with sweet and spicy BBQ, grilled chicken and vegetable skewers, charcuterie, grilled fish, and sushi, making it a versatile choice for this summer’s sunny days.
Situated in the heart of the Plaine des Maures around the town of La Garde Freinet at the northern foot of Notre Dame des Anges chapel, Ultimate Provences vineyard cover 46 ha in wild countryside, bordered by a vast evergreen pine forest and sheltered by the surrounding mountains. Formerly Chteau des Launes, vines were first planted in the mid 20th century by the Perrono family and is now owned by Chateau de Berne. The vineyards are certified as organic. Resident winemaker, Alexis Cornu, is an innovator who shares Ultimate Provences mission to produce wines for pleasure to celebrate taste, life and this unique corner of Provence. The ultimate lifestyle expression with its unique, ridged bottle which captures the region’s elegance and distinctive character.
The vineyard comprising uniquely different terroirs is characterised by shallow soils, laid on an impervious sandstone subsoil. The most beautiful Cinsaults are grown on hillsides to ensure maximum exposure to the sun. Nearby and slightly lower down, is a great plot of Vermentino, known locally as Rolle, a variety known for its fruity notes of citrus and pear. La Grande Pice is a magnificent parcel on a plateau entirely devoted to Syrah. Finally, the Perrono plot, which is named after the family that planted the first vines on the property, young white and black Grenache vines have joined the magnificent Syrah already established there. The vineyards are ploughed using horses to reduce soil impaction and the grapes are harvested at night by machine to retain freshness. The vineyards are sustainably cultivated and are certified as Bee Friendly.
The grapes were gently pressed with a short skin contact to impart the iconic delicate pale pink colour with coppery reflections. Fermentation took place with selected yeasts at controlled temperatures of 16-18C in stainless steel tanks to retain freshness and vibrancy. A short ageing on the lees before final blending and bottling resulted in a fresh and fruity contemporary ros style.
