Domaine Chevillon is run by Robert’s two sons, Bertrand and Denis. Denis takes care of the vineyard, focussing on low yields and strict grape selection, while Bertrand manages the winery. Domaine Chevillon’s vineyards stretch from the south of Nuits-Saint-Georges to the north of Vosne-Romanee. They favour old oak for fermentation and elevage, using only up to a third new for even their top wines.
This French wine is from fruit vines that are between 50 and 60 years old. Bertrand uses as little as 15% new oak for the maturation of this cuvee, preferring older barrrels for the majority.
Robert Chevillon Nuits St-Georges Vieilles Vignes pairs well with roast pigeon, pork belly, mushrooms, and beetroot.
