Chapoutier, or Maison M. Chapoutier, is a winery and negociant business situated in Tain-l’Hermitage in the Rhone region in France. Chapoutier produces wine from appellations across the Rhone region, but it is typically their top Hermitage wines, both red and white, that receive the most attention and accolades.
The Roussillon area was made for Michel Chapoutier and it was in Latour de France that he set up Domaine de Bila-Haut, on a combination of soils perfectly suited to spicy Syrah, fruity Grenache and tannic Carignan key Languedoc-Roussillon varieties basked in the southern French sun and freshened up by the coastal tramontane wind. Black and brown schist give the wine the sunny ripeness, gneiss minerality and freshness and limestone and chalk strength and balance.
A number of Selection Parcellaire (single vineyard selection) wines are also made at this unique domaine.
Vineyards
A part of the grapes comes from limestone, clay soils and gneiss in the Agly Valley; the other part from granite soils at higher altitude (500m, later ripening sites).
Vinification
50% Grenache Blanc 20% Macabeu 20% Marsanne 10% Roussanne
The grapes are manually harvested early in the morning and hand selected to protect the aromas. After pressing, the must is cold-settled. Vinification is performed in temperature controlled stainless steel tanks.
Tasting Notes
This wine exhibits floral and citrus aromas of lemon & grapefruit with smoky notes. It is fresh and aromatic on the palate with great acidity and a lot of freshness on the finish mixed with salty notes, which express the minerality of the wine.
Perfect with grilled sardines and fresh crusty bread.
