Dominio del Urogallo is a pioneering biodynamic winery nestled in the mountainous region of Cangas del Narcea in Asturias, northern Spain. Founded in 2009 by Francisco Asencio, who transitioned from a career in renewable energy to viticulture, the estate spans approximately 17 hectares of steep, slate-rich vineyards, some of which are over a century old . Asencio’s approach emphasizes minimal intervention, utilizing indigenous yeasts for fermentation, avoiding added sulfites, and allowing the wines to age naturally over multiple winters . The winery focuses on cultivating native grape varieties such as Albarn, Carrasqun, and Verdejo Negro, producing wines that reflect the unique terroir of Asturias.
