ORGANIC/ NATURAL / BIODYNAMIC / LOW SULPHITE/ VEGAN
Juicy and deep, this is a lovely example of a natural, clean white Bourgogne. Strawy yellow in the glass, it opens up to notes of citrus, honey blossom, chamomile and yellow apple, with just a hint of nutty smokiness. The palate is smooth and structured, with more lemon, minerals, and a long, fresh finish.
The grapes are harvested manually and ferment with indigenous yeast in whole clusters. After that, they rest on their lees in oak barrels for a short period. Theres no filtration, no fining and no added sulphur, making for the best showcase of its terroir.
Renaud Boyer, originally from Meursault trained to be an engineer before switching careers and becoming a vigneron of land in Saint Romain. An organics enthusiast who had been working the vines free of chemicals since the 1980’s and has now converted to biodynamic practices. He cultivates his 5-hectares by hand and horse with great passion following strict organic and natural principles when making his wine, without additives or sulphur.
