Domaine Mayrac is in the mountainous Limoux region at a height of up to 550 metres. It has been organic since 1987. Many biodynamic practices are used, such as the use of sheep manure and application of fermented preparations made from herbs. There is an abundance of worms and insects in the soil. The height of the vineyards gives the wine a refreshing character. The Domaine has a selection of oak barrels, not only from different regions of France, but also America and Hungary. They aim to let their wines take their time – to develop a character which reflects their terroir. Very little sulphur is used,

Vineyards

Limoux is a relatively new appellation (created in 2003) in the eastern part of the Aude in southern France, which applies to red and white wines. The vineyards lie around the town for which it is named, in the Pyrenean foothills to the east of Corbieres and south of Carcassonne.

The vineyards here are higher and cooler than those of any other Languedoc-Roussillon appellation, and also further from the temperature moderating influences of the Mediterranean. This leads Limoux and the surrounding area to produce a style of wine quite distinct from other appellations. This includes neighbours as Corbieres.

Vinification

75% Chenin Blanc, 20% Chardonnay, 5% Mauzac, hand-picked, aged in oak for 12 months.

Tasting Notes

A rich nose with apricot, vanilla and citrus notes. Complex in the mouth, with vanilla, apricot, and nutty flavours. Very fresh. Mineral notes. Perfect with seafood.

This is a really versatile wine for vegetable dishes. Also great with chicken and cheeses.
