Domaine de la Chaises Le Clos des Plantes cuve comes from a historic plot located in Epeign-les-Bois, on the clay-siliceous slopes of the south bank of the Cher. These vines are managed by the Davault family, who have been cultivating the land since 1850. The regions climate, influenced by the proximity to both the Atlantic Ocean and the Massif Central hills, is characterised by hot, torpid summer days, which help the Gamay grape to reach optimal ripeness. The unique soil, rich in tuffeau (the calcareous rock famous throughout the Loire Valley), contributes to the wines mineral freshness and complexity. The grapes are sorted and destemmed before a 30-day fermentation in underground concrete vats, followed by a careful ageing process that allows the wine to develop its full flavour profile.
