Refined sparkling Italian white that offers that step up in quality from Prosecco, despite the similar price tag. Dry, delicate and slightly aromatic Cavicchioli Pignoletto 1928 Modena is a versatile wine that pairs beautifully with all meals, or just have it as an aperitif. Light straw yellow in colour, the pour displays a creamy white crystalline foam with fine, persistent perlage. The nose has aromatic nuances of white flowers and jasmine, whilst the palate is dry and soft with a long finish of floral sensations.
AlthoughCavicchioli 1928 Pignoletto Brut NV will pair with pretty much anything, it is ideal as an aperitif, with risotto, tortellini or fish dishes.
Obtained purely from Pignoletto grapes grown in the vineyards north of Modena. The pressed grapes are cooled with the skins at a low temperature for approximately 24-36 hours. After the second Charmat-type fermentation of approximately 20-25 days, the new sparkling wine continues to refine on its fermentation yeasts for another 4-5 weeks. A pleasantly fresh white sparkling wine, with a fine and elegant taste, dry with a long finish of floral sensations.Soft pressing with whole grapes at a controlled temperature and addition of selected yeasts. Second fermentation in cuve close at low temperature and rest for 120 days in an autoclave on the yeasts.
