The name of AMATITEA comes from the town of Amatitn, Jalisco, “The cradle of Tequila” 100% agave white tequila, own house, produced in the state of Jalisco; harvesting until maturity with the traditional jima method, always selecting our best harvest. We begin our process with cooking over low heat, thus preserving the soft and sweet flavours of the agave to continue with the extraction of juices and honey from the agave in the milling process with a tahona, where we gently extract the juice without stressing the fibre of the agave. Fermentation natural stage where wild yeasts are responsible for transforming the agave honey into alcohol, we end with the distillation inoriginal copper stills and pot geometry, where we slowly distil our tequila over heat, achieving an exquisite distillate. Production is carried out on agave farms located in the Valles area, in the municipalities of Amatitn and Tequila, Jalisco, Mexico.
