Junmai Ginjo Sake from Chiyonishiki Rice * 72cl * 7.0% ABV * Akashi, Japan

The history of Akashi-Tai Brewery stretches back to the end of the Tokugawa period (1600-1867), when the company produced soy sauce and traded in rice. Since 1918, they have been crafting artisanal sake from only the choicest ingredients, including the noble Yamadanishiki rice and spring water from the Akashi region, and is brewed in small batches by hand.

This fresh, sparkling Sake is made using traditional brewing methods followed by a secondary bottle fermentation. Delicate, zesty and peachy, it is brilliant as a standalone aperitif, or paired with ricotta or goats cheese. It would also go nicely with a Teppanyaki salmon with fresh avocado.
