Ross-on-Wye Raison d’Etre Cider is truly unique. Fermenting clean, ripe, bittersweet apples in oak casks, patiently matured, and bottle conditioned. The blend is made up primarily of Michelin, which DNA analysis revealed to actually be Bisquet. This soft, lean, cider apple variety perfect counters the more tannic Dabinett, creating a seamlessly well balanced blend.
