Natural Chardonnay made in the topped-up method (non-oxidative). This is a pure and rich Chardonnay with no flavours of oak. A strong mineral character with a lively and direct acidity. Arguably the cuve from Les Bottes Rouges has the greatest ageing potential but is also great to drink now.

Jean-Baptiste Menigoz was a teacher in Arbois before he fell in love with natural winemaking. He split his time between the two for years, before Stphane Tissot convinced him to make wine full-time. He was joined in 2014 by Dutch winemaker Florien Kleine Snuverink, and the estate now comprises seven hectares over seven different plots, with soil types ranging from limestone to heavy clay to marl. He’s worked organically since day one, with biodynamic processes in place according to each plot’s needs. He makes a vast range of wines, all with native yeasts, no fining, and no filtration.
