750 mL | 80 Proof (40% ABV) | Aejo Tequila | Casa San Matas, Los Altos, Jalisco | Aged 26 Months in Weller 12 Year Bourbon Barrels
Blue Weber agaves grown on the highland estate are slowroasted in stone ovens, rollermilled, and twice distilled in stainlesssteel pot stills with natural spring water. The fresh tequila then rests for 26 months in barrels that once held Buffalo Traces acclaimed Weller 12 Year wheated bourbon, layering rich vanilla, caramel, and toasted oak over bright cookedagave sweetness.
Nose: Toasted vanilla, baked agave, and almond nougat with hints of dried fruit.
Palate: Sweet cooked agave entwines with silky caramel, dark chocolate, and seasoned oak.
Finish: Long and warming, echoing vanillaspice and gentle bourbon depth.
Limited Expresiones del Corazn release aged exclusively in Weller 12 Year bourbon casks
Highland agave slowroasted for exceptional depth and natural sweetness
Collaboration between Casa San Matas (est.1886) and Buffalo Trace Distillery
Additivefree, bottled at an approachable 80 proof to highlight nuanced barrel influence
Sought after by tequila aficionados and bourboncask collectors alike
Sip neat in a copita to capture the layered aromatics, or add a single ice sphere to reveal deeper vanilla tones. It elevates an Oaxaca Old Fashioned with agave nectar and chocolate bitters, or shines in an Aejo Manhattan with sweet vermouth and mole bitters.
Does this tequila contain any additives?
No. All color and flavor come solely from mature agave and time in bourbon barrels.
How limited is the release?
Each vintage is highly allocated; bottles often sell out quickly once distributed.
Will it taste like bourbon?
Expect complementary vanilla, oak, and caramel notes layered over classic cookedagave sweetness rather than an overt whiskey profile.
Is it certified additivefree?
While not formally certified, Casa San Matas follows traditional, additivefree methods.
