Symphonie de Novembre is 100% petit manseng grapes left on the vines until November to concentrate the sugars. Petit Manseng has a high acidity which gives these sweet wines their beautiful balance and refreshing finish.
In 1970, owner, winemaker and label artist, Henri Ramonteu took over his family’s cattle farm in Monein in southwest France. He sold the cattle, purchased four hectares of vines, and started Domaine Cauhape. Thewineshave the hallmark Jurancon which showcases the very best of what the Jurancon region has to offer.
The vineyards are south and south east facing and are up to 400 metres above sea level. This allows the grapes to ripen slowly which helps retain good levels of acidity.
