This wine is not your typical Bordeaux. It is made with a technique called carbonic maceration, which is more common in the Beaujolais region. This technique involves putting whole bunches of grapes in a sealed tank filled with carbon dioxide. The grapes start to ferment inside their skins, creating a wine that is fruity, light, and low in tannins. Tattarrattat is made from Merlot grapes grown in a single plot called Terrasses Bas, which has clay and limestone soil.

At Chateau Picoron, they are passionate about Merlot. They have 4.5 hectares of vineyards around the chateau, and each wine is made from a single plot of grapes.
