Valdemar Estates Entre Nosotros Cabernet Sauvignon 2021 is a meticulously crafted red blend from Washington State’s Columbia Valley AVA. The composition includes 76% Cabernet Sauvignon, 12% Merlot, 8% Petit Verdot, and 4% Syrah.

This wine offers bold aromas of blackberries, plums, and roasted dark chocolate. On the palate, powerful black fruit flavours are enhanced by a savoury twist of roasted coffee beans. Additional notes include mocha, baking spice, and espresso, with a serious undertone of blood iron and dried spice.

The grapes underwent fermentation in stainless steel with 17 days of skin contact, followed by 19 months of ageing in French oak barrels (29% new and 71% used). This process imparts structure and complexity to the wine, resulting in a medium-plus body with balancing acidity.

This Cabernet Sauvignon pairs excellently with grilled red meats such as ribeye, New York strip, and sirloin. It also complements lamb chops seasoned with rosemary and thyme, burgers topped with smoked gouda or aged cheddar and bacon, wild game like venison and duck, as well as pork dishes including barbecued and pulled pork.
