The Mount Langi Ghiran ‘Billi Billi’ Shiraz is a great everyday drinking wine, with a strong sense of variety and vintage. The fruit for Billi Billi is predominantly from the Mount Langi Ghiran vineyards in The Grampians, Victoria with a supporting role played by Shiraz growers from Heathcote, Bendigo and Swan Hill. At the winery whole berries were transferred to large concrete and smaller open-top fermenters where plunging or pumping-over occurred three times a day until fermentation was complete. Malolactic conversion occurred mostly in tank with the dry wine racked to used French oak puncheons and barriques where it matured for 12 months.
