All grapes are hand-picked and 80% de-stemmed.Selected grapes are fermented with low temperature maceration and alcohol fermentation in stainless steel tanks for white and concrete tanks for red.Alcohol fermentation is immersed at a low temperature of 15C for the first 3 days, and then fermented at 28-31C for about 15 days.Aging is done in oak barrels for about 12 months, and new barrels are used at a rate of about 25% only for red.An outstanding white wine reminiscent of the classic good Meursault!
